Our young chef, Chef Liván Valdés, is committed to a very special Ibizan-Mediterranean style. Honest cuisine accompanied by seafood, fresh fish, meat, and grilled meats; the perfect combination to leave you with a good taste in your mouth in the harmonious corners that will make you enjoy a unique experience.

The interior design concept is by Lázaro Rosa-Violán, who captures a nautical style, paying homage to the island. We find ourselves in the midst of construction in the 10th century, a place frequented by pirates and corsairs, which later became the meeting point of the bohemian chic scene that made Ibiza what it is today. Its walls hide incredible stories and anecdotes featuring important figures such as Grace Kelly, Rainier of Monaco, Salvador Dalí, Ursula Andress, and the members of Pink Floyd.

Legend has it that the building where the Corsario Restaurant is located today was once a pirate's home centuries ago. A protected 10th-century construction offering an unbeatable panoramic view of the walled area and the port of Ibiza, it is home to a gastronomic project led by the young chef Livan Valdés. In 2024, Valdés redesigned the menu, which he defines as "a gastronomic proposal that aims to surprise with a cuisine where local seasonal produce from small producers shines, traditional Ibizan recipes are revisited, and very modern techniques are used to maximize the use of raw materials, fermenting and aging meats and fish."

Can you imagine dining with Dalt Vila at your feet? That's exactly what you'll do at Corsario, the charming restaurant of the Torre del Canónigo hotel, located in a 10th-century building. This summer, they hired young chef Livan Valdés to join the kitchen, giving their menu a new twist.
In the chef's own words, it's "a gastronomic offering that aims to surprise with a cuisine that showcases local, seasonal produce from small producers, revisits traditional Ibizan recipes, and employs highly contemporary techniques to maximize the use of raw materials, fermenting and aging meats and fish."
